Did you know that dried apricots are so nutritious astronauts take them into space? Give yourself a boost by adding a tablespoon on your Weetabix - they're packed with beta-carotene for healthy eyes and skin. Then add 1% or skimmed milk.

Calories = 239kcal with skimmed milk; 250kcal with 1% milk
If you substitute fresh apricots (2) for dried apricots the calories reduce to 193kcal/204kcal

Ready brek Double Chocolate Brownies

Ready brek Double Chocolate Brownies

Delicious served hot with ice-cream or cold as a lunch box treat or afternoon snack.

What you'll need...

  • 50g (2oz) plain chocolate, broken into pieces
  • 50g (2oz) butter
  • 175g (6oz) caster sugar
  • 100g (4oz) Ready brek Chocolate
  • 2.5ml (1.2tsp) baking powder
  • 2 eggs, beaten
  • 2.5ml (1/2 tsp) vanilla essence, icing sugar to dust (optional)

Method

  1. Preheat the oven to 180C (350F) or Gas Mark 4 and have a 20.5cm (8inch) square cake tin, lined
  2. Place the chocolate and butter in a bowl and melt either by standing over a bowl of hot water or by placing in the microwave oven
  3. Stir in the sugar and add the Ready brek and baking powder and mix well add the eggs and vanilla essence and stir until all the ingredients are well combined
  4. Spoon the mixture into the tin and ensure it is evenly spread over the base. Cook for 30 – 35 minutes until the brownie has risen and the sides are beginning to crack
  5. Allow to cool in the tin before cutting into 16 squares
  6. Dust with icing sugar.

Makes 16 brownies.
