Banana Muffin Recipe

Banana Weetabix Blueberry Muffins

Banana Weetabix is your secret ingredient in this deliciously fruity muffin recipe from Elizabeth's Kitchen Diary!


  • 170g plain flour
  • 30g golden caster sugar
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 2 Banana Weetabix (or plain ones if you prefer)
  • 45ml maple syrup* I used a maple/carob blend
  • 60ml sunflower oil
  • 1 small egg
  • Full fat milk
  • 85g frozen blueberries


  1. Preheat oven to 190 degrees C. Lightly grease a six hole muffin tin, or use paper liners.
  2. Combine the flour, sugar, baking powder and spices in a medium sized bowl.
  3. Crumble in the Weetabix and stir until combined.
  4. Crack egg into a measuring jug and make up to 170 ml with enough full fat milk. Whisk in the maple syrup and oil.
  5. Add the wet ingredients to the dry and fold with a wooden spoon until just combined.
  6. Gently fold in the frozen blueberries. Do not over mix.
  7. Spoon into the prepared muffin tin and bake for 20-25 minutes, until well risen and golden.
  8. Serve warm with butter, honey or jam.
