Weetabix Figgy Lemon Bars Recipe

Figgy Lemon Bars

Chewy, zesty and packed full of fig flavour – these Figgy Lemon Bars make an absolutely super snack time treat.


Makes 12 bars

For the bars:

  • 100g (4oz) sunflower margarine
  • 50g (2oz) soft brown sugar
  • 45ml (3tbsp) golden syrup
  • 10ml (2tsp) grated lemon rind
  • 7 Weetabix, crushed
  • 75g (3oz) wholemeal flour
  • 5ml (1tsp) baking powder

For the filling:

  • 100g (4oz) dried figs, finely chopped
  • 15ml (1tbsp) lemon juice


  1. Heat oven to 180 degrees C.
  2. Grease an 18cm (7”) square cake tin.
  3. Melt margarine with sugar, golden syrup, and lemon rind in a saucepan over a low heat. Do not allow the mixture to boil.
  4. Add crushed Weetabix, flour and baking powder, stir well.
  5. Spread half the mixture over the base of the tin.
  6. Mix together figs and lemon juice and scatter over the top.
  7. Cover with remaining Weetabix mixture and press down firmly.
  8. Bake for 20-30 minutes until golden and firm. Cut into 12 bars and leave to cool in the tin.
