What you need

  • 3 Weetabix
  • 3 potatoes
  • 1 egg
  • 1 chopped garlic clove
  • A pinch of dried coriander, basil, salt and pepper

Toppings

  • 1-2 rashers of bacon
  • 1/2 an onion (chopped)
  • A handful of spinach
  • 1 poached egg
  • 100g feta cheese
  • A sprig of fresh mint

What to do

  • Boil the potatoes until soft, then drain the water and crumble them into a bowl with the Weetabix.
  • Add one egg and mix in chopped garlic, coriander, basil, salt and pepper. Now divide the mix into two patties.
  • Bake for 20 mins at 180c and turn them every 5 mins.
  • Then fry off the chopped bacon in a drizzle of oil, add half an onion and fry until golden, before adding the spinach and cooking until it wilts.
  • Finally, finish off with crumbled feta cheese, a pinch of freshly chopped mint and a poached egg.
