Walnut-loaf-a-bix

What you need

  • 2 Weetabix
  • 450g plain white flour
  • 7g sachet fast-action yeast
  • 60g chopped walnuts
  • 25g sunflower seeds
  • 1 teaspoon of rapeseed oil
  • 200ml milk
  • 2 tablespoons of low-fat Greek-style natural yogurt
  • 1 teaspoon of salt

Toppings

  • Strawberry chia jam (or store-bought strawberry jam), chopped figs and walnuts

What to do

  • Mix all the ingredients in a bowl, adding enough milk to create a soft dough.
  • Leave it to rise in a warm place for a few hours or until it has doubled in size. Punch the dough to deflate.
  • Put into a stoneware pot, lined casserole dish or 1lb bread tin. Allow it to rise again in a warm place for a few more hours.
  • Bake at 180c for approx. 40 mins until golden brown, coming away slightly from the sides and sounding hollow when tapped underneath.
  • Cut your bread into thick slices, spread your strawberry chia jam liberally over each and top with fresh figs, walnuts and honey. Dee-lish.
